Α. Research work related to biotechnology of edible and medicinal fungi (mushrooms). This work refers to:



  • the study of the physiology, growth and metabolism of higher edible fungi through their cultivation in liquid synthetic culture media.

  • the determination of fungi metabolic products present in liquid and solid cultures, such as polysaccharides, enzymes and lipids.

  • in-depth study of lipids of different species of edible and medicinal mushrooms.

  • the exploitation of various agro-industrial residues and waste (e.g. cereal straw, reeds, beans, cotton ginning residues and maize, waste glycerol, etc.) through the fermentation (solid-state and submerged fermentation) of edible fungi to produce biotech products of high added value (e.g. polysaccharides, lipids, edible biomass).

  • the production in alternative substrates, new for our country mushroom species (Lentinula edodes, Pleurotus eryngii, Volvariella volvacea, Agrocybe aegerita, Auricularia auricula, etc) that present interest for introduction to business culture

  • the production of mushroom spawn and the benchmarking of normal-growing characters of various kinds of mushrooms

  • the study of the physiology, growth and metabolism of higher and lower fungi and yeasts during their growth in liquid synthetic culture media.
  • the use of renewable raw materials through the production of microbial lipids and other metabolic products (e.g. citric acid, mannitol, oxalic acid) and enzymes from these microorganisms.
